Homemade toasted muesli has so many good things going for it, no pantry should be without it. Easy to make, tastes great and can be enjoyed in many ways.
Recipe type: Breakfast
  • ¼ cup coconut oil (or macadamia oil)
  • ¼ cup sweetener - honey, maple syrup, rice syrup
  • 5 cups (500g) rolled oats (not quick oats)
  • 1 cup coconut - desiccated, shredded or chips
  • ½ cup sunflower seeds
  • ½ cup pepitas
  • 1 cup nuts, chopped coarsely - almonds, cashews, brazil, macadamia, pecan
  1. Preheat oven to 180C (355F) and line a large baking tray with baking paper.
  2. Combine oil and sweetener in a small saucepan over low heat. Stir to melt and combine together. Remove from heat and set aside.
  3. In a large bowl toss together the oats, coconut, seeds, pepitas and nuts. Pour over the oil and sweetener mix and stir to coat all the ingredients.
  4. Tip the mix into prepared baking tray and spread out evenly. Put into the oven and stir every 10 minutes until it is a lovely golden colour (35-40 minutes). Be careful not to overcook or it will burn and become bitter.
  5. Allow to cool and then add any dried fruit before storing in an airtight container for up to 3 months.
The Klutzy Cook Notes
- Dried fruit suggestions - diced apricots, cranberries, sultanas, currants, raisins, dried apple, dried pear.
- Make it sugar free - use rice malt syrup and leave out dried fruits.
- Make it nut free - replace chopped nuts with other seeds or more coconut. Use coconut oil only.
- Make it gluten free - replace oats with quinoa flakes, raw buckwheat or millet flakes.
- Try experimenting with other flavours and spices such as cinnamon and vanilla.
