1. ‘Ready To Go’ Healthy Substitute
Rather than reaching for the usual cereal boxes that fall well short of providing a nutritious start to the day, reach instead for a ready made bowl of this toasted muesli. Planning ahead of time to have a batch of this on hand will be worth the effort and your body will thank you.
2. Make It Whatever You Want
This yummy, crunchy muesli can be anything you want it to be. The base is oats and from there add whatever nuts, seeds and dried fruits your family prefers or happens to be in the pantry. Not only can the flavours be changed by adding different ingredients, but if there is a need to remove certain ingredients due to allergies, this can be easily accommodated as well (see recipe notes).
Once made, it will store for months in an airtight container ready for those mornings when you need it. Mind you, this stuff tastes so good it may just become the cereal of choice.
3. Save Money
Another great benefit of making your own toasted muesli is the cost. Ready made boxes of toasted muesli aren’t cheap and for the price of one small box, you can make around 4 times the amount.
4. Not Just A Cereal – Serve It Many Ways
The obvious way to eat this muesli is to plonk it in a bowl with your milk of choice. Voila! But there are many other ways to enjoy it as well. Try some of these ideas:
- Sprinkle over yoghurt along with some fruit (my son loves banana and frozen raspberries)
- Grab a small handful as an on the go snack during the day
- Sprinkle over stewed fruit as a crumble and serve with cream, custard or ice cream.
- Soak overnight in milk of choice and some yoghurt for a bircher style muesli.
- ¼ cup coconut oil (or macadamia oil)
- ¼ cup sweetener - honey, maple syrup, rice syrup
- 5 cups (500g) rolled oats (not quick oats)
- 1 cup coconut - desiccated, shredded or chips
- ½ cup sunflower seeds
- ½ cup pepitas
- 1 cup nuts, chopped coarsely - almonds, cashews, brazil, macadamia, pecan
- Preheat oven to 180C (355F) and line a large baking tray with baking paper.
- Combine oil and sweetener in a small saucepan over low heat. Stir to melt and combine together. Remove from heat and set aside.
- In a large bowl toss together the oats, coconut, seeds, pepitas and nuts. Pour over the oil and sweetener mix and stir to coat all the ingredients.
- Tip the mix into prepared baking tray and spread out evenly. Put into the oven and stir every 10 minutes until it is a lovely golden colour (35-40 minutes). Be careful not to overcook or it will burn and become bitter.
- Allow to cool and then add any dried fruit before storing in an airtight container for up to 3 months.
- Make it sugar free - use rice malt syrup and leave out dried fruits.
- Make it nut free - replace chopped nuts with other seeds or more coconut. Use coconut oil only.
- Make it gluten free - replace oats with quinoa flakes, raw buckwheat or millet flakes.
- Try experimenting with other flavours and spices such as cinnamon and vanilla.
