With the arrival of Junior Masterchef on our screens, my eldest son has been inspired to increase his efforts in the kitchen.  This usually lasts for a day or two after the latest episode and then dies off for the rest of the week.  He’s decided he will appear on the show next year and while I’m more than happy to help him achieve that goal, I’m a little dubious about whether he can maintain the consistency of effort to get there.

Unlike my daughter, who is always looking for an opportunity to get involved in cooking, his kitchen forays come in spurts.  And there is a definite preference for anything that involves licking a bowl or spoon.

Anyway, in the interest of his culinary career, we took to the kitchen this week to prepare this Chunky Apple & Pecan Cake.  It’s from a recipe he dug up out of a “How To Make Money for Kids” book and he was tickled pink with the results (we all were actually).

Now another thing Mitch loves to do is read and write.  In fact he decided recently to begin producing his own newsletter called “The Klutz Son”.  He has been working on this quite a lot and the first edition is all about cakes and includes his apple cake recipe.  So, I am going to turn the rest of this post over to Mitch and his newsletter – all his own words and typing…

The Klutz Son by Mitch McArthur

This Klutz son is about making cakes. The last cake the klutz made was a Broncos birthday cake. The Klutz makes a lot of cakes and everyone loves them. Now here is a recipe for an apple cake just to get you cooking a good apple cake.

Ingredients:

.2 cooking apple peeled and dicedA proud Mitch with his cake

.1 cup of sugar

.1 ½ cups of plain flour

.1 teaspoon bicarbonate of soda

.  1 teaspoon of cinnamon

.1 teaspoon of mixed spice

.1 cup of broken pecan nuts

.1egg

.125 grams (4.5 oz) butter

Now here is how to make the cake.

Method:

Melt the butter and then let it cool. In one bowl, sift the flour, bicarbonate of soda, cinnamon and mixed spice, then add the pecan nuts. Stir it up so that all the ingredients are mixed together. In another bowl, mix the pieces of apple with the sugar. Pour the cooled butter into a large mixing bowl and whisk an egg into it. Then add the apple and sugar mixture, followed by the ingredients in the other bowl. Mix it all together, then pour it into a greased 20centimetrers (8 inch) cake tin .Bake for 45-55 minutes at 180celsius

Now that is only a starter there will be a lot more cake coming up. Here is some of the cake the klutz has made over the years. Now here they are Apple cakes, Ice-cream cakes, Banana bread,  Sport cakes,  Cars and Fire engine cakes, Dinosaur cakes, Cartoons and movies cakes, Cup cakes, and lot’s and lot’s more. But when you cook know mater, what your making there is one ingredient that makes your cooking so special and that is love.

So there you have it – my son’s first guest post, a great recipe and perhaps the start of a career, but in what field I’m not sure.
