Beetroot and Carrot Salad
Fast and Fresh! This super quick salad or side dish can be on the table in under 5 minutes. If you’ve never tried fresh beetroot before, this is the perfect introduction. Try it, you’ll LOVE it 🙂

Sadly, I was rather late in life to the joys of fresh beetroot.
It wasn’t until I was pregnant with my first child that I first really tasted beetroot. I mean really tasted beetroot. And during this time it came from a great little health food shop that served up the best ever fresh salad rolls for lunch.
These rolls were HUGE – the size that is hard to get your mouth around. Everything on them was fresh and in abundance. Including beetroot. Not the sickly sweet tinned variety. But freshly grated piles of beetroot.
Prior to this, the only beetroot I even knew existed came from a tin. I’d never seen a fresh beetroot, let alone tasted one. And I loved it! My how things have changed, now fresh beetroot is a regular on the menu.
This Beetroot and Carrot Salad is one of the many ways we now enjoy beetroot. This salad just oozes fresh in taste and looks. Plus, if you’ve never tried fresh beetroot before, it is a great introduction to this gorgeous vegetable.
Just be warned, unless you want purple hands for at least 12 hours, wear some disposable gloves while grating. Enjoy 🙂
Beetroot and Carrot Salad
Ingredients
- 1 large beetroot grated (approximately 1 large)
- 2 large carrots grated
- 2 tablespoons parsley chopped
- Juice of 1 lime
- 1-2 tablespoons olive oil
- Salt and pepper
Instructions
- Combine the beetroot, carrot and parsley in a bowl. Squeeze over the lime juice. Drizzle with olive oil. Stir dressing through and season to taste.
