Tuna patties or fish cakes are a regular feature in our house for a few reasons.

  1. It gets a ‘fish’ recipe onto the menu.
  2. They are a cheap, but tasty meal.
  3. The kids love them!

I’ve posted a couple of other patty/fish cake recipes before here and here but this latest version is different again.  Plus, it’s loaded with cheese (the feta adds a nice zing) and vegies which makes it not only super tasty, but manages to sneak some extra vegetables into the family’s bellies.

Cheesy Tuna & Vegie Patties

Ingredients

3-4 potatoes, boiled and mashed

425g can tuna

1 large onion, finely chopped

2 cloves garlic, chopped

1 medium zucchini, grated

1 medium carrot, grated

2 eggs, beaten

100g feta, crumbled

1 cup tasty cheese, grated

A few tablespoons of dill and parsley, chopped

1/2 cup plain flour (for dusting)

Method

Put flour into a shallow bowl or on a plate and season with a little salt and pepper.  Set aside.

Mix everything else together in a large bowl – don’t be afraid to get your hands dirty!

Heat a few tablespoons of oil in a frying pan.  Take a handful of mixture, shape into a patty, dust in flour and cook in pan.  Cook a few minutes each side until golden brown and then drain on some paper.  Enjoy!

The Klutzy Cook Notes

  • If fresh dill isn’t available, use dried.  It is a very worthwhile flavour addition to the recipe.
  • Patties can also be cooked on the barbecue or grill.
  • Keep the extras for lunch the next day – they are just as good cold.
